One of the highlights of your visit will be to learn about the natural making process, which emphasizes minimal intervention and the use of organic practices. This approach not only preserves the integrity of the grapes but also enhances the expression the terroir, resulting in wines that are both authentic and vibrant.
A special focus of the vineyard is the production of “pét-nat” or Pétillant Naturel, a traditional method of sparkling wine production which undergo a secondary fermentation in the bottle pét-nat is bottled before fermentation is complete, capturing the natural carbonation from the fermentation process.
This creates a delightful lightly sparkling wine with a fresh and fruity profile, often exhibiting unique flavors that reflect the local environment. ​
